Produced by the legendary Teobaldo Cappellano (and now his son Augusto) in the heart of Serralunga d’Alba, this isn’t just a bottle; it’s a piece of liquid history.
While many producers buy pre-made extracts to flavor their Chinato, the Cappellanos remain one of the few houses to guard their secret family recipe with a level of intensity usually reserved for state secrets.
What Makes It Special?
The foundation is, quite literally, the best of the best: Estate-grown Barolo. Most Chinato is made from “lesser” wine, but Cappellano uses their top-tier Nebbiolo as the canvas.
From there, it is infused with a meticulously hand-ground blend of botanicals:
Cinchona Bark (China): The “Chinato” namesake, providing that signature, elegant bitterness.
Gentian Root: For deep, earthy structure.
Cinnamon & Clove: To add warmth and spice.
Cardamom: For a lifted, aromatic finish.
