Endearingly known to locals in Trento as “Specialino,” this is arguably the oldest style of red bitter still in production, and it’s a far cry from the neon-hued mixers of the mass market.

What sets this apart is its soul: a wine base (mostly Trebbiano) rather than neutral grain spirit. This gives the aperitivo a stunning, vinous texture and a roundness that balances its botanical bite. While those “other” guys use artificial dyes, the Cappelletti family—now in their fourth generation—still uses natural carmine to achieve that deep, seductive crimson.
