The “ADN de Foudre” is his deep dive into the Meunier identity. Sourced from 40-year-old vines in the limestone-heavy soils of Festigny and Le Breuil, this cuvée skips the stainless steel for a year of aging in large oak foudres. The result isn’t “oaky” in the traditional sense; rather, the wood allows the wine to breathe, creating a textural depth that is nothing short of captivating.
On the palate, this is a bone-dry thrill ride. Because Mignon waits for peak ripeness before harvesting, he opts for zero dosage (no added sugar). You’ll find a crystalline profile of red apple skin, citrus confit, and a distinct, smoky minerality.
