This 2022 Vieilles Vignes is a glorious reminder that while the rest of the world is rushing to get wine into a bottle and onto a shelf, the Defaix family is perfectly happy to let time do the heavy lifting.

This isn’t your typical lean, acid-trip Chablis. Because Defaix insists on long, patient aging on the lees—often keeping his village wines in tank for two or three years before they even see a glass—you get a texture that is nothing short of luxurious.

It’s remarkably layered and deep for a village level wine–due in large part to an average vine age of 50 years.
