Domaine Fevre Chablis Vaulorent 2021

The 2021 vintage marks a return to the “old school” Chablis profile we love. After a string of sun-drenched, riper years, 2021 gives us that electric, nerve-shattering tension that defines the region. It’s a wine that doesn’t just sit in the glass; it hums.

It’s classically Fèvre—clean, architectural, and deeply mineral. Think crushed sea shells, lemon zest, and a subtle flick of white flowers. There’s a tiny hint of spice from the very judicious use of oak (Nathalie and Gilles use just enough to add texture without masking the fruit).

Vaulorent is a “climat” within the larger Fourchaume vineyard, but it’s the only Premier Cru that actually touches the Grand Cru hill—nestled right up against Les Preuses. In the glass, that proximity shows. It’s got the muscle and breadth you’d expect from a Grand Cru, but with that quintessential Premier Cru cut and energy. It has a weight and dry extract that feels much more significant than your average 1er Cru. You get laser-focused acidity, green apple, and a distinct saline, oyster-liquor finish that lingers for minutes.

Definitely a bottle that will reward you immensely with 3–5 years in the cellar.
