Domaine Gilbert Picq Chablis 2023
$33.00
Didier and Pascal Picq are the ultimate farmer-vignerons. They don’t have any Grand Cru holdings to lean on, so they treat their village-level parcels with the kind of obsessive care usually reserved for the most expensive real estate in the Côte d’Or.
The Picq signature is ultra-purity. There isn’t a single stave of wood in the entire winery; everything is fermented and aged in stainless steel. When you taste a Picq wine, there is no vanilla or spice to hide behind—it’s just the raw, vibrating energy of Kimmeridgian limestone.
While some 2023s across Burgundy leaned into a riper, more tropical profile, Didier Picq has managed to keep the energy high and the focus sharp. This is Chardonnay stripped down to its limestone bones.
The nose is a bracing—all oyster shells, crushed stone, and a hint of green apple skin. On the palate, it’s remarkably precise. There’s a bead of acidity here that cuts right through, carrying flavors of tart lemon zest and a salty, iodine finish that makes you reach for the next sip immediately.
