At her distillery in Valle de Guadalupe, Barajas leads an all-female team that prioritizes soul over artifice, resulting in a Reposado that feels more like a farmhouse cider than a sterilized spirit.

While many Reposados spend their time in charred new oak to soak up vanilla and caramel notes, La Gritona rests for just eight months in reused American whiskey barrels. The goal isn’t to mask the agave, but to let it breathe. Expect a profile that leans into the savory side of the spectrum. It’s light on its feet with a texture that’s crisp rather than syrupy.

Beyond the liquid, the presentation is a stunner. Each bottle is hand-blown from recycled Mexican glass, sporting a distinct light-green tint and a stubby, swing-top shape that looks incredible on a bar cart. It’s a tequila that respects the plant, the process, and the person drinking it.
