The 2023 “El Muelle de Olaso” is a stunning “Vino de Pasto” that captures the pure, unadulterated essence of the Albariza soils of Jerez. Grown in the prestigious Pago Carrascal, just a stone’s throw from the Atlantic, the fruit is harvested in multiple passes to ensure a perfect balance of ripeness and zip.

What makes this bottling truly sing is the technique: 80% is fermented in stainless steel to preserve that electric precision, while the remaining 20% is sun-dried (asoleo) and fermented in seasoned Sherry casks. A whisper of flor aging adds a savory, yeasty complexity without veering into full-blown Sherry territory.
