Pain Perdu, meaning “lost bread,” embodies Fabien Castel and collaborators’ vision of rediscovering the untapped potential of their region. Just as stale bread transforms into a beautiful dessert, Castel’s project transforms overlooked terroirs, micro-climates, and local knowledge into exceptional wines. Born from serendipity and friendship, the initiative began in winter 2023 when three dedicated land stewards joined Castel. Each farm contributes unique vineyard plots with distinct soils and microclimates, enabling the creation of single-plot wines or nuanced blends that capture the character, richness, and stories of the land.
