While many still associate Spanish bubbles exclusively with the Cava DO, the Raventós family famously stepped away from that designation to focus on a more rigorous, terroir-driven approach in their own “Conca del Riu Anoia” region. The results speak for themselves.
This is a bracingly dry, mineral-driven Blanc de Blancs crafted from estate-grown, biodynamic grapes (Xarel-lo, Macabeu, and Parellada). On the nose, it’s all about precision: think Granny Smith apples, citrus zest, and a distinct chalky undertone that reminds us of the fossil-rich soils of their vineyards. On the palate, the mousse is remarkably fine and persistent, offering flavors of white peach and a hint of toasted brioche from 18 months of aging on the lees.
Clean, vibrant, and incredibly versatile, this is the bottle we reach for when we want Champagne quality without the Champagne price tag. It’s an absolute natural alongside briny oysters, salty Marcona almonds, or simply as the perfect aperitif to kick off an evening.
