Terra Costantino was the first organic-certified estate on the volcano, and their ‘de Aetna’ bottling is, for us, the ultimate benchmark for what “drinking the mountain” actually feels like.
The 2021 vintage is a total overachiever. It’s 90% Nerello Mascalese and 10% Nerello Cappuccio, grown on the southeast slopes in the Contrada Blandano. Because these vines sit between 450 and 550 meters up, they get those massive day-to-night temperature swings that keep the fruit snappy and the acids bright.
Think of this as the rugged, Sicilian cousin to a high-toned Volnay. It pours a translucent, shimmering ruby. On the nose, it’s all wild strawberries and blood orange, but there’s this unmistakable “Etna” streak of crushed rocks, dried oregano, and a hint of woodsmoke that grounds it.
This is a “fridge-temp” red through and through. Give it 20 minutes in the cooler to tightened up those bright red fruit notes. It’s versatile enough for a Tuesday night pizza, but elegant enough to bring to a dinner party where people actually care about what’s in their glass.
