Jean-François Germain, a grower of immense humility and precision, is famous for his patient winemaking. In one of the coldest cellars in the village, fermentations move at a glacial pace, often stretching through the winter. This slow evolution, combined with the presence of 75-year-old vines, results in a white Burgundy of remarkable density and terroir transparency.
