Grown on the Aeolian Islands just north of Sicily, the 2023 Didyme (the ancient Greek name for the island) is all about tension and purity. The nose is incredibly expressive, jumping out of the glass with orange blossom, jasmine, and a hit of ripe apricot. But once it hits your palate, the volcanic soil takes the lead. It’s lean and racy, driven by a crushing minerality and a saline finish that practically demands a plate of grilled sardines or salty capers.

Vinified entirely in stainless steel to preserve its crystalline fruit, this is a vivid, high-acid white that captures the salt-spray essence of the Tyrrhenian Sea. It’s exactly what we want to be drinking while the sun is still up.
