Pain Perdu (“lost bread”) is Fabien Castel’s project exploring overlooked terroirs and micro-climates. Born in 2023 from a collaboration with three dedicated farmers, it crafts single-plot wines or blends that transform the region’s hidden potential into expressive, story-driven wines.
